RESPONSIBLE FOR: Food & Beverage supervisory and administrative staff (Front and Back of House) Two restaurants, one fine dining one other menuuffet Two bars 38,000sq ft of meeting, banquet, and event space Prairie Knights Casino & Resort is seeking a dynamic Food & Beverage professional with a strong background in concept development, operations, and financial responsibility to lead it's F&B team to the undisputed title of "Best in The Dakotas". Our ideal candidate will have high energy, a positive attitude, and strong backgrounds in fine dinging, limited service, banquetsatering, and beverage program development. Casino-specific experience not required, but multi-unit experience, preferably in a hotel or resort environment, is highly desired. SCOPE AND MAIN PURPOSE OF JOB: To oversee management, budget and operation of food and beverage services for the Enterprise including restaurants, bars, snack bar, banquet service, stewarding, employee dining room and kitchen. Assumes total responsibility for presenting a first class restaurant operation with excellence in guest service and for the financial results generated by the Food and Beverage Department.
SYNOPSIS OF DUTIES: Develops accurate and aggressive long and short range financial objectives for the Food & Beverage Department which are consistent with and supportive to those of the Enterprise as a whole. Establishes and maintains effective internal controls within the Department. Communicates effectively with staff responsible for sales and/or promotions in order to facilitate the fulfillment of banquet and special group obligations. Maintains existing programs and develops new concepts that ensure the highest possible quality of food service, as well as, standardizing the portions used and accounting for food, beverage and labor costs. Ensures the availability of adequate facilities and equipment for staff use. Recommends for hire, trains and elicits the productive motivation of all F&B staff. Conducts regular performance appraisals of supervisory and administrative staff, and ensures the regular and formal performance review of all staff members. Ensures conformance of all operations and activities to established procedures and applicable laws, regulations, and ordinances.
PREREQUISITES
General: Must be age 21 or older. Must qualify for Key Gaming License.
Education: Minimum of two years of post-secondary education in an applicable discipline, with baccalaureate degree in Hotelestaurant Management preferable. Must be able to communicate effectively, both orally and in writing, in the primary language used in the workplace.
Experience: Requires progressively responsible management experience in food and beverage operations to over $2 million in sales volume, preferably in a destination resort hotelonference center setting, with 3 meal a day, fine dining, bars, and room service operation. Requires demonstrated success in team-building and staff development through the use of a collaborative style of management. Must have competence in the utilization of effective cost control techniques. Requires computer literacy and familiarity with the use of point-of-sale (Micros 4700) and inventory management (FoodTrak) systems.
Physical: Requires bending, climbing, reaching, standing, walking, sitting, finger dexterity, grasping, repetitive motions, normal visual acuity and hearing. Must have ability to lift up to 50 lb. in weight. Food & Beverage Supervisor $21.50-$32.25 DOE

RESPONSIBLE FOR: Assistant Food & Beverage Manager All Front of the House Bars and Restaurant Staff
SCOPE AND MAIN PURPOSE OF JOB: Responsible for the total operation of Bars and Restaurants. Sets the standards for excellence in service to exceed guest satisfaction and expectations.
SYNOPSIS OF DUTIES The Food & Beverage Supervisor must have complete knowledge of legal requirements including but not limited to labor laws, health and safety requirements and liquor laws including gaming regulations as they apply to the food and beverage operation. It is his/her responsibility to coordinate food and liquor service activities of the bars and restaurants and to forecast food and beverage needs. The Food & Beverage Supervisor controls all cleaning and maintenance of equipment and fixtures on a daily basis, arranges for repairs, and other services for all bar and restaurant outlets. He/she investigates and resolves food and beverage quality and service complaints. The Food & Beverage Supervisor inspects bars and restaurants on a daily basis to ensure cleanliness. He/she directs hiring, scheduling, training, motivation, appraising, and terminating of personnel. The Food & Beverage Supervisor will review financial information such as sales and costs, and will also monitor budget to ensure profitability while exceeding guest expectations.
PREREQUISITES General: Must be age 21 or older. Must qualify for Tribal Gaming License.
Education: Minimum of two years college education. Bachelor’s Degree in Hotelestaurant Management preferable. Must be able to communicate in the primary language used in the workplace. Requires good written and verbal communication skills.
Experience: Knowledge of Food & Beverage service and product. Must understand and possess a strong sense of cost control. Computer literacy required. Verifiable experience in food service operation at a supervisory capacity.
Physical: Must be able to exert well-paced mobility for periods of up to six (6) hours in length, and have the ability to lift 20 pounds frequently and up to 50 pounds occasionally. Must have the stamina to work a minimum of 50 to 60 hours a week.
